{"id":2720,"date":"2014-03-07T11:38:35","date_gmt":"2014-03-07T16:38:35","guid":{"rendered":"http:\/\/www.ramapo.edu\/catalog-2014-2015\/?page_id=2720"},"modified":"2019-02-16T15:55:03","modified_gmt":"2019-02-16T20:55:03","slug":"food-studies","status":"publish","type":"page","link":"https:\/\/www.ramapo.edu\/catalog-2019-2020\/sshs\/food-studies\/","title":{"rendered":"Food Studies"},"content":{"rendered":"<h4>Website: <a href=\"https:\/\/www.ramapo.edu\/sshs\/\">School of Social Science and Human Services<\/a><\/h4>\n<div class=\"facultyTable\"><div class=\"row colSet\"><br \/>\n<div class=\"sColumn col-sm-12 col-md-12 \"><\/p>\n<h4 class=\"convenerListing\">Convener:<\/h4>\n<p><a href=\"https:\/\/www.ramapo.edu\/sshs\/faculty\/martha-ecker\/\">Martha Ecker<\/a><\/p>\n<\/div>\n\n<div class=\"sColumn col-sm-12 col-md-12 \">\n<h4 class=\"facultyListing\">Faculty:<\/h4>\n<p>Current as of June 2019<\/p>\n<\/div>\n\n<\/div>\n<\/div>\n<div class=\"collapsableContent\" tabindex=\"0\"><div class=\"collapsableTitle\"><span class=\"fa-stack\"><i class=\"fa fa-circle fa-stack-2x\"><\/i><i class=\"fa fa-chevron-down fa-stack-1x fa-inverse\"><\/i><i class=\"fa fa-chevron-up fa-stack-1x fa-inverse\"><\/i><\/span>About the Minor <\/div><div class=\"c_content\">\n<p>The minor in Food Studies will situate the study of the production, distribution and consumption of food in the context of social, biological and cultural analyses. \u00a0It will provide students with a foundation to prepare them for graduate studies and\/or a career in the industry. \u00a0Students will have an intensive experience which will allow them to use their theoretical knowledge in practice and to provide them with opportunities for meaningful research.<\/p>\n<p><span style=\"line-height: 1.5em\">Students will understand why some of the plants, animals, and microbes are chosen for our meals. \u00a0Topics include: \u00a0milk and dairy products, eggs, meat and fish, edible plant parts, candy and chocolate, wine and beer, processed food and food preservation, food safety and analysis. \u00a0The biological basis and nutritional value of foods, and changes in food molecules during food preparation will be emphasized. \u00a0The pathways of energy metabolism and the general metabolism of macro-nutrients will be studied. \u00a0Students will learn about the metabolic rate and health impact of vitamins, minerals and fiber as well as the importance of energy balance and body composition and their relationship to obesity.<\/span><\/p>\n<p><span style=\"line-height: 1.5em\">Students will also gain an understanding of conventional agricultural systems and sustainable agricultural systems (agro-ecology), with an emphasis on their environmental impacts. \u00a0The needs and mechanics of growing food crops and livestock will be given. \u00a0A review of the requirements for the conversion to a sustainable farm and the necessary information needed to start a farm will be provided.<\/span><\/p>\n<p><span style=\"line-height: 1.5em\">Students will develop an awareness of the meanings of food among different cultures, and explore the ways in which geographic, cultural, political, and economic forces interact to influence food preferences, health, and nutritional status. \u00a0The program will consider how gender, ethnicity, class, religion, the media, and corporate capitalism influence the manner in which we perceive, acquire, prepare, and consume food. \u00a0Moreover, the courses will examine how we, through what and how we eat and do not eat, construct relationships with our bodies, with others, with our histories, with animals, and the environment.<\/span><\/p>\n<p><span style=\"line-height: 1.5em\">Students will analyze the social structures and processes that influence food production, distribution, consumption, and how each of these affect human populations in developed and developing societies.<\/span><\/p>\n<p>As with other minors, the Food Studies minor is intended to complement the disciplinary specialization and methodological training inherent in a major. Students will achieve the necessary background for eventual career and graduate study opportunities.<\/p>\n<\/div><\/div>\n\n<div class=\"collapsableContent\" tabindex=\"0\"><div class=\"collapsableTitle\"><span class=\"fa-stack\"><i class=\"fa fa-circle fa-stack-2x\"><\/i><i class=\"fa fa-chevron-down fa-stack-1x fa-inverse\"><\/i><i class=\"fa fa-chevron-up fa-stack-1x fa-inverse\"><\/i><\/span>Outcomes of the Minor <\/div><div class=\"c_content\">\n<p><strong>Goal<\/strong>: Students will develop a historical and socio-cultural analysis of production, distribution and consumption.<\/p>\n<ol>\n<li>Learning Outcome: Describe the significance of variations\/inequalities by race, class, gender, religion, and age.<\/li>\n<li>Learning Outcome: Students will develop an awareness of the meanings of food among different cultures, and explore the ways in which geographic, cultural, political, and economic forces interact to influence food preferences, health, and nutritional status.<\/li>\n<li>Learning Outcome: Students will gain an understanding of conventional agricultural systems and sustainable agricultural systems (agro-ecology), with an emphasis on their environmental impacts.<\/li>\n<li>Learning Outcome: Students will be able to analyze the requirements for the conversion to a sustainable farm.<\/li>\n<\/ol>\n<p><strong>Goal<\/strong>: Students will develop a comprehensive understanding of food biology.<\/p>\n<ol start=\"5\">\n<li>Learning Outcome: Understand molecular &amp; cell biology.<\/li>\n<li>Learning Outcome: Students will learn about nutrients, metabolism, energy balance and body composition, in relation to good health, disease, and body weight.<\/li>\n<\/ol>\n<p><strong>Goal<\/strong>: Students will demonstrate an ability to make the connections between abstract conceptual formulations and practical applications.<\/p>\n<ol start=\"7\">\n<li>Learning Outcome: Students will understand why some of the plants, animals, and microbes are chosen for our meals.<\/li>\n<\/ol>\n<\/div><\/div>\n\n<div class=\"collapsableContent\" tabindex=\"0\"><div class=\"collapsableTitle\"><span class=\"fa-stack\"><i class=\"fa fa-circle fa-stack-2x\"><\/i><i class=\"fa fa-chevron-down fa-stack-1x fa-inverse\"><\/i><i class=\"fa fa-chevron-up fa-stack-1x fa-inverse\"><\/i><\/span>Requirements of the Minor <\/div><div class=\"c_content\">\n<ol>\n<li>Students are required to take 5 courses (20 credits) to complete this minor.<\/li>\n<li>At least 1\/2 of the courses fulfilling a minor must be distinct from the student\u2019s major. That is, three of the five courses required for a minor cannot be used towards fulfillment of major requirements. A school core does not need to be completed for a minor.
